Mini Biscuit Pizzas

I have a few cans of biscuits in my refrigerator and I thought it might be a good idea to open one. But what would I make with these biscuits? Pizza!! Pizza? Yes, pizza. I have mozzarella cheese and pasta sauce on hand, so why not. I thought these mini treats could use an extra topping so I chopped up some frozen chicken tenders. I love chicken on pizza and so does my little princess(truthfully, she likes everything), but I didn't have any fresh chicken prepared. The frozen chicken tenders worked great. You have to try these sometime!
1 can of layered biscuit dough 1 jar pasta sauce Mozzarella cheese Toppings: chicken, veggies, pepperoni, sausage, etc.

1. Preheat your oven at 400 degrees. Grease a cookie sheet.
2. Separate each biscuit into two pieces (the layers will make this easier.)
3. Lay out all your biscuits. Top with a tablespoon of sauce.
4. Place cheese and other toppings over sauce.
5. Bake for about 11 minutes or until biscuit is golden brown and cheese is melted.
6. Remove from oven and let stand fora few minutes.
7. Serve and enjoy.

Rainbow Thin Mint Cookie Bark (with pretzels)

Who doesn't like cookies, chocolate, pretzels and M&Ms? What if you put them all together?! While browsing Pinterest a few weeks ago, I came across the following pin.

I was so upset I didn't have any Thin Mints. What's a girl to do? Visit her parents and find a box of Thin Mints she ordered from her Girl Scout leader sister a few months before! SCORE!! I came home and IMMEDIATELY made this cookie bark. St. Patrick's Day came and went so I thought I'd use an entire bag of different colored M&Ms.

Here's what you'll need to make this cookie bark:
Cookies (Thin mints preferably), Pretzels, Dark chocolate candy melts, M&Ms, wax paper, cookie sheet, spatula

Now to make your cookie bark:
1. Place a sheet of wax paper on your cookie sheet
2. Break up your cookies and pretzels. Spread the cookie and pretzel pieces evenly on the wax paper.
3. Melt your candy melts in 30 second intervals in the microwave. Pour over the cookie and pretzel pieces.
4. Spread chocolate with a spatula so that it coats all of the cookie and pretzel pieces.
5. Top with your M&Ms.
6. Let it sit at room temperature for an hour or so. Once it's solid, you can break it apart and have at it.
7. Enjoy!!


I'm so Motivated!

I've had such a productive day and that makes me feel GREAT! By 10AM my daughter and I were showered and dressed, my bed was made(stripped and put new sheets on, my princess was fed, I drank a cup of coffee, and my first load of laundry was in the washer. It's now 2:30 and I've vacuumed and steam mopped the entire house, washed two additional loads of laundry, cleaned the kitchen, started my spring coffee filter wreath, and started dinner. I should be exhausted, but I'm so proud of myself. I've always said that I'm very lazy and most people would agree, but I'm motivated to make some changes. I find that I feel so much better if I shower and get dressed earlier in the day. Feeling accomplished also makes me feel good. I have a few posts that I've been meaning to put up since last week and I finally have the chance to type them all up. Baking with My Princess

If you don't know, toddlers LOVE to make a mess. The best way to make a mess is baking of course! Think of all the flour, sugar, dough/cake batter, and SPRINKLES! Late last week I decided I wanted to bake cookies and my monster princess was a little cranky, so I thought I'd get her involved. We wore our matching aprons and made a delicious batch of sugar cookies. Alana, my little girl, helped by holding ingredients, helping me whisk the royal icing, and topping the cookies with sprinkles. Although I had a bit of a mess on my hands, it was such an enjoyable experience. I can't wait to have more time with her in the kitchen making messes and most importantly....making MEMORIES!

I'm back!!

Hi all! I've been gone for far too long. Where did I go, you ask? I've been here, but I've been in sort of a funk here. I guess I've experienced what people call the "mid winter blues." I'm also still trying to find a healthy balance between blogging, housework, playtime with my princess, and me time. I'm trying to go to bed earlier so that I can wake up earlier and that seems to be helping. I get a lot more done in the morning and end up with some spare time in the afternoon. During my "blue" period last month, I didn't use this time to blog, but THIS month is a different story! I have a lot of great ideas for upcoming posts and I hope to have them up soon. I'm also super happy that my spring cleaning is almost done. I just have a couple more big projects and I'm finished! Look out for my next post! As always, thanks for reading! Have a great day!

Productive Day Away from Home

I was away from the house all day on Friday , but was able to do a few things at home in the morning. I washed a load of laundry at 6 AM (Thank goodness for high efficiency machines with timers :-)). I put the clothes in the dryer before leaving. I put away the clean dishes from the night before, made my bed, and straightened up in the bathroom :). It sure feels good to come home to a clean house. I spent the day with my dad and sister. My dad and I made frozen banana bites and cake mix banana bread with walnuts and chocolate chips! Both treats were pinspired ideas that you should definitely check out!

January Goals Update

January was a good month. I met my personal/household goal of keeping up with my housework so that I won't become overwhelmed if something comes up and I miss a cleaning day. I ended the month with a bang with my brand new steam mop! I love my steam mop and I hope it continues to motivate me to clean and use it everyday. I didn't get to any crafts this month, but I have a couple planned for February. I sure hope I get to them. I find it difficult to sit and craft when I feel I have housework to tend to. Finding a balance between caring for my daughter, keeping up with the house, and blogging has been hard for me. I think I'm beginning to figure it out! This Week's Menu Plan

Today is Wednesday and I'm finally posting my Menu Plan. We've had leftovers the last two nights ( courtesy of our moms). Tonight I'm heating up some food from the freezer and I'll probably make Chicken Parm tomorrow. I plan on spending the day at my parents' on Friday so we'll have to grab take out or  eat leftovers. I found a crock pot chicken parmesan recipe on Pinterest that I'd like to try. 
I feel like I've had such a busy week, when I really haven't gone out. There are only a couple of items in my hamper and I've dusted, vacuumed, and steam mopped everyday, so I'd consider that to be pretty productive. I have to dedicate more time to blogging and I'm considering making a daily schedule, although it's been my experience, that schedules don't always work with small children. There will be more on that in my next post. I hope everyone's having a good week so far and is enjoying this beautiful weather!

This Week's Menu

I'm a day late with posting this, but I've actually followed it the last two days. Maybe this will work after all!

Monday- Leftovers (Pasta with chicken, peas, and carrots tossed with olive oil and garlic)
Tuesday- Crockpot chili
Wednesday- Mac n cheese with ham
Thursday- Broccoli and cheddar stuffed chicken with rice
Friday- Leftovers

Cheesy Southwestern Chicken and Rice Bake

All I have to say about this recipe is YUM!!!! The original recipe can be found at I made it a little differently (of course) and thought my version was delicious. This is another quick recipe that can be made from ingredients you most likely already have on hand.

2 cooked chicken breasts cut into chunks
2 Cups cooked rice
1 10-12 oz bag Southwestern mix Frozen Veggies (or can of black beans, can corn, bell pepper, medium onion)
1/2 jar of salsa
12 oz Cheddar cheese

1. Mix chicken, rice, veggies, salsa and 4 oz cheddar cheese in a bowl.
2. Pour into an oven safe dish.
3. Top with 8 oz cheese and bake for 20 minutes or until cheese is melted.


What Menu Plan?

It's Thursday and I've only followed my menu plan one day this week. That one day was Tuesday when I made Broccoli Cheddar Soup in the crackpot. It was more of a carrot, broccoli cheddar soup, but tasted just as good. I think I'll make it differently the next time and I'll share my recipe and method. Monday night we had fast food because were out late. Wednesday, I forgot about my menu and thought of the fastest and easiest thing to make and I came up with chicken fajitas. Here I am at 7AM thinking about what I can make for dinner tonight and I figured I should go back to my menu. Tonight, I'm making Sweet potato fries and baked chicken cutlets. I had a really productive day yesterday and I'm hoping for the same today. I  don't have any big plans for today except maybe making a shadow box for my daughter's room and my daily housework. What's on your agenda for today?

Sausage, Egg and Cheese Biscuit Muffins

If you're looking for a fast and simple breakfast/brunch item, you've come to the right place. This recipe is delicious and super simple to make. I came across a can of biscuits in my fridge that was going to expire in a couple of days and I remembered that I had pinned something on Pinterest that was made with canned biscuits. Have I mentioned how much I love Pinterest?! Here is my pin with a link to the original recipe:
Bacon, Egg & Cheese Biscuit Muffins (Veggie Option!)

My bacon was uncooked and frozen so I decided to defrost a couple of precooked sausage patties I had on hand and used those instead. Instead of three eggs, I used two and I added onions and green bell peppers to the egg mixture for added flavor. My muffins turned out great! This is what they looked like:

This is my third attempt at menu planning and this time I plan on sticking to it (I hope). I think planning my dinner menu for the week will help me keep my grocery budget down and enable me to try new things. If I plan ahead, I can buy ingredients before hand. That being's this week's plan:

Monday- Corned beef hash and white rice
Tuesday- Broccoli cheddar soup in the crock pot
Wednesday- Sweet Potato Fries and Chicken Cutlets
Thursday- Rice, Beans, and Pork chops
Friday- Garlic Pasta with Chicken and Veggies

Friday the 13th!!

Hi all! I've been really busy today taking down the rest of my Christmas decorations and cleaning up around the house. I've already started dinner and I'm still picking up a few things. I feel like today was very productive and it's only 2:30! I hope to have a couple of great recipes up this weekend. I think I'm going to go back to menu planning to help keep my grocery budget down. I usually don't follow my menu plans, but I really want to get my weekly grocery budget down. I hope this attempt is more successful than my previous ones. We'll see starting next week!! So far I've only met two of my January goals and I'm looking forward to doing a couple of things this weekend. I'm looking forward to sharing all these great things with you!
On a side note, I decided on a theme for my daughter's second birthday-- Cookie Monster! She's my little cookie monster and absolutely loves that crazy guy. I've found some great ideas on Pinterest. Check my board out I've also come up with a few ideas of my own. I plan on writing a post for everything I make! I'm so excited for this party. We're definitely going to be on a budget, which motivates me to make most of the decorations and all the yummy treats for our party guests. I can't wait to start sharing this party planning process with all of you!

Freezer Smoothies

Have you ever wanted a smoothie, but didn't want to take out the blender or didn't have the fruit to make one? I've been there and these two things have helped me with my smoothie addiction! First, buy your favorite fruit in bulk when it's on sale. Second, make smoothies ahead of time and freeze them in popsicle molds or small containers. You can use whatever fruits you like. This is just one of the combinations I make

1 Banana
1 C strawberries
1 C mango
Water ( add a little at a time to get the consistency you want)
* Use orange juice instead of water for added sweetness*

1.Put all the fruit in a blender and blend. Add as much water or orange juice until it reaches the consistency you desire.
2. Pour into glasses to enjoy now or freeze to enjoy whenever you're in the mood for a smoothie!

Vegetable Lo Mein

Why order take out when you can make this quick and delicious meal any weeknight? This recipe is definitely one of my go to meals on busy days. This Vegetable Lo Mein can be made with chicken or pork as well.

1 box Spaghetti
1 bag frozen vegetables (Stir fry mix or Asian medley)
1 Tb grated ginger or a couple dashes ground ginger
2 Tb minced garlic
3 Tb Hoisin sauce (Teriyaki is fine too)
1 Tb Soy sauce
1 to 2 Tb Hot Sauce (optional)

1. Mix together ingredients for sauce and reserve.
2. Cook pasta according to box directions.
3. Drain pasta and reserve 1/4 cup of cooking water. 
4. Place about a teaspoon of oil in the pot and add garlic and ginger. Add pasta and vegetables.
5. Add reserved pasta water to sauce and add to pot. Toss until sauce is absorbed (about 30 seconds).
I hope you enjoy this recipe as much as our family does. It's a quick and tasty meal that tastes great as leftovers too. Give it a try!

January Goals

We're already 4 days into the new year, but it's never too late to set goals. I have big plans for my blog this year. I just started in October and it's taken awhile for me to see that it is a lot of work. I want to make pretty things for our home and make lots of yummy recipes for my family and share it with all of you! I'm working harder at putting more posts out and promoting my blog, so tell all your friends! Thank you for reading and if you're not already following, feel free to do so ;-). It's not too late!

My goals for this month include a few recipes and one project (for now!).

I'm making the 52 reasons why I love you project found here as an inexpensive Valentine's Day present.
I hope I can start scrapbooking as well.

Happy New Year!

I hope everyone had a wonderful holiday and a happy and healthy start to the new year. I've been very busy with a sick baby and a bit sick myself, but we both feel better and I'm ready to get back on track. I have big plans for this year in terms of trying new recipes and making A LOT of great things. I've also thought a lot about planning and setting goals. I'm going to set monthly goals for projects I want to complete and recipes I want to try. I would like to try 4 new recipes a month, one a week. I received a crockpot for Christmas and haven't used it yet, so I plan on using that a few times a month. Maybe I'll make two meals a month in the crockpot. I've tried the whole menu planning thing and it hasn't quite worked out for me. I usually plan my meals based on how my day is going (Bad day= take out or leftovers). So for now, I'll list the recipes I would like to try each month and write my posts as I make them.
